Take 4 good sized green pepper and boil for 3 to 4 minutes. Cook 1 lb of ground turkey, chicken, or beef seasoned to taste. Add steamed veggies, I like mushrooms and onions to meat.
Add white cheese of your choice to the bottom of pepper followed by serving of meat. This is where you can go low carb or high carb. If you would like high carb add 1/4 cup cooked brown rice. Add another layer of white cheese to top of pepper and bake at 350 degrees for 15 minutes.
No Bake Protein Bars (clean treat)
Ready in 45 minutes * Makes 8 servings
2 cups quick cooking oats 1/2 cup peanut butter 4 scoops protein powder (vanilla or cookies 'n' cream flavor works best) 1 tbsp ground flaxseeds 1/2 cup water
1. Knead all ingredients in bowl. 2. Line square baking pan with wax paper and spread dough. Optional: spread thin layer of peanut butter on top 3. Freeze for 30 minutes 4. Remove and cut into bars.
2 scoops chocolate whey protein powder 1/4 to 1/2 cup brewed coffee, cooled 1/4 cup instant oats, unflavored 1/4 cup low-fat cottage cheese 2 tbsp sliced almonds (optional) 1 cup fat-free whipped cream
Combine all ingredients except whipped cream in immersion blender to mix until smooth. Add more coffee if too thick. Fold in whipped cream. Refrigerate overnight and serve, or freeze for an hour, stiring every 15 minutes, and serve.

A little bit about me. I've wanted to compete in a figure/bikini competition for over 10 years but either I've gotten pregnant, gotten my body into fighting shape - but only to gain all the weight back again, or I've just been to plain scared to actually do it! I know - I'm full of excuses! I just turned 33 and I'm so mad at myself that I'm not living the dream I've always wanted to. I can preach the story to others but I sure haven't been living it! How long can I continue to be a hypocrite?! So, here I begin my fitness transformation (and YES, I'm having a hell of a time getting the motivation to eat right, and workout). So I've started this blog to hopefully inspire others, and to diary my progress, thoughts, feelings, accomplishments. I'm looking forward to finally doing what I've talked about all these years, and I hope to inspire others to reach for theirs as well.
